Nebraska Corn Cakes Preparation
Mix dry ingredients together in medium bowl. Mix buttermilk, eggs and butter (or oil) together. Stir into dry mixture and incorporate, but do not overmix. Pour onto hot (375 - 400) griddle, 1/3 cup for each pancake.
May use 1 cup all purpose flour and 1/2 cup whole wheat if desired.
