Chorizo, Kale and Cannellini Bean Soup

This soup recipe is perfect for a winter lunch with french bread. My only caution is that if you are watching your salt intake this recipe might be one to skip.

1 tbsp olive oil
4 cloves garlic
0.25 small yellow onion
7 cup chicken stock
1 Dried Chorizo Sausage; (about 3 inches long), cut in
1 15-oz can Cannellini Beans; drained
3 large Kale leaves; pulled into small pieces (remove thick

In a small soup pot add the olive oil, garlic and onions. Cook over medium high heat allowing the garlic to turn yellow on all sides. Once the garlic has yellowed and the onions are more or less translucent add the chicken stock. Then add the chorizo. Allow to boil for about 1 minute and then reduce temperature to medium. Add in the beans. Once the beans have heated through add in the Kale and allow leaves to soften.

Serve warm with french bread or garlic toast.

I followed the recipe exactly. The onions were too crunchy and the flavor was lacking, but I think it has possibilities. I want to try it again with carmelizing the onions and adding a Tblsp of tomato paste with the garlic

I posted this recipe. Not sure how to edit, but it is not 7 cups of chicken stock - it is just 1.5 cups. Sorry for any confusion.
