Terris' Salmon and Prawn Platter

This is a crisp summer platter! Quick and ultra easy. I make this all the time and the customers love it! Use as many of the prawns and salmon as you wish but I will give the amounts I serve for 1 person.

Original recipe makes 1
1 leaflettuce; enough to cover the plate
4 slicessmoked salmon; or more if the slices are small;rosette
12 largeprawn; shell on, cooked
1000 island dressing; or cocktail sauce
1 lemon; wedged, extra to squeeze
capers; just a handful

place dressing in a small ramekin or dish on the middle of a plate. square plates look best.

cover plate with mesculin to make a salad base

distribute tomatoes over mesculin

squeeze lemon juice over

make rosettes out of the salmon and place on the mesculin in the corners

lay 3 prawns tail in, fanning from ramekin to plate edge between the salmon

sprinkle capers around the salad

dress with lemon wedges and any (optional) leaf herb if you have some. ie parsley, coriander etc.

Use the 'dip' in the plate as an edge for the salad keeping the food with-in the dip as much as possible. Try different style plates as that is just as important for the presentation. To make rosettes, wrap salmon slice loosely around your thumb, fold top down to meet the bottom, sliding it off your thumb as you do it. Place it into the corner of the salad gently squeezing the base. It will look like a rose. [I posted this recipe.]
