These great cookies have a brownie type taste with a gooey caramel chocolatey center from the Rolos.

"A friend gave us this recipe, and it is one of the best cookies we've ever had. They are great right out of the oven warm and fresh, but they also taste incredible the next day etc... They are a little labor intensive (have to unwrap each rolo and roll them in batter etc...) but they are so worth it!" - melarky

1 cupbrown sugar
1 cupSugar
2 3/4 cupFlour
3/4 cupBaking cocoa
1 tspsoda
1 cupmargarine
2 tspvanilla
2 Eggs
48 rolos

Brownie Like Rolo Cookies Preparation

Mix sugars, baking cocoa, margarine, vanilla, and eggs. Once it's all mixed add the flour and the soda. Refrigerate dough for 30 minutes. Roll dough around Rolo (should be about the size of a ping pong ball) and roll in sugar (extra white sugar, not from main ingredients). Place on ungreased cookie sheet and bake at 375 for 7-10 mins. You can usually tell when they are done when the tops are starting to crack.

    These are yummy however the dough was super sticky and the rolos melted out the bottom of the cookies and stuck to the cookie sheet. I am going to try with more flour next time to see if it works better.

    These taste great! I am not fond of rolling the cookies in sugar so I think next time I will skip that step. Otherwise these are awesome, especially fresh out of the oven!

    I haven't actually made these but it says that you have to have 48 rolos. I'm just gonna use a couple of blocks of rolos to save time instead of getting a dozen small packets of rolos that only have like seven in them
