1 cupQuinoa; cooked
1 1/2 tablespoonsfresh lemon juice; divided
1/3 cupcanned chickpeas; (garbanzo beans), rinsed and drained
2 tablespoonscucumber; chopped peeled
2 tablespoonsCelery; chopped
2 tablespoonsred onion; diced
1 1/2 tablespoonsfeta cheese; crumbled
1 1/2 teaspoonsdried dill; chopped fresh or 1/4 teaspoon
2 teaspoonsExtra Virgin Olive Oil
2/3 teaspoonSalt
2/3 teaspoonBlack Pepper; freshly ground

Quinoa & Garbanzo Salad with Feta Preparation

Combine quinoa, chickpeas, cucumber, celery, diced red onion, 1 1/2 tablespoons feta cheese, and dill in a bowl, toss gently to combine.

Combine lemon juice, olive oil, salt, and pepper, stirring with a whisk. Drizzle over quinoa mixture, and toss gently to coat. Cover and chill.
