This is a wonderful bread to have with a hot cup of Java

1 cupoil
3 Eggs
2 cupsSugar
1 tsp.vanilla
3 cupsapples; diced
3 cupsFlour
1 tsp.cinnamon
1 tsp.soda
1 tsp.Salt
1 cupchopped nuts; (optional)

Good Morning Apple Bread Preparation

Combine and set aside the oil, eggs, sugar, and vanilla. Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually. Add apples and nuts. Bake in 2 regular loaf pans with greased bottoms for 1 hour and 20 minutes at 325 degrees. Cool 10 minutes in the pan. Sprinkle with sugar, if desired.
