Pour olive oil in a frying pan. Add onions and saute until opaque/see through. Add chicken, Italian seasoning, and garlic. Saute until 75% done. When almost done, add can of tomatoes to the pan. Cover and simmer for another 5-10 minutes (or until done). Add slices of Mozzarella to the top of the chicken breasts, cover and melt cheese.
Cook Angel Hair pasta as directed on package. Drain the pasta. After the cheese is melted on the chicken, remove the chicken from the pan and add pasta to the pan and stir/toss the tomato mixture with the pasta.

vicki1122 4 years agoIt is better to add the tomatoes after the chicken is about 75% - that way the chicken stays moist. [I posted this recipe.]
