Crockpot Enchilada Casserole

I had heard that you could make an enchilada casserole in the crockpot, this was my first attempt and I have to say I wasn't disappointed!

Original recipe makes 8
1 1/2 lbsground beef
4 green onions; sliced, or other onion (1/2 c.) diced
1 jalepeno; finely diced
1 14.5-oz candiced tomatoes
1 pkgtaco seasoning mix
9 corn tortillas
2 10-oz cansenchilada sauce
8 ozcheese; grated
Cilantro; sour cream & guacamole if desired

Crockpot Enchilada Casserole Preparation

In a large frying pan, brown the hamburger over med heat then drain well. Return to stove and add onions and jalepeno, cook until onion is tender. Add diced tomatoes, juice and all and the taco seasoning, heat through then turn off heat.

In a crock pot, pour 1/2 can enchilada sauce on the bottom, then cover the bottom with the tortillas (mine takes about 3, one on each end and I split one in half to cover the sides). Pour half the meat mixture over the tortillas, pour the other 1/2 can of the sauce over the meat mixture, sprinkly some cheese over that. Add another layer of tortillas, pour the rest of the meat mixture over the tortillas, top with a 1/2 can of sauce and sprinkle with cheese. Add the final layer of tortillas on top, cover with the remainder sauce and cheese. Cook on low for 4-6 hours.

Serve warm and top with sour cream, guacamole and chopped cilantro if desired.

    The corn tortillas really throw this dish off the table for me. It turned out pretty bland.

    Overall, it was tasty and easy to make. My choice of enchilada sauce and taco seasoning made the dish a little salty for me. Will make some adjustments the next time I try this!

    OK, I tried it! The flavor is there and everyone enjoyed it providing I wasn`t using the Hot Enchilada sause. However, the presention really sucked and not something I was particularly proud of.

    Very easy to make. Turned out a bit bland...but would make again...only would add more seasonings.
