Cream Cheese Potato Soup "inspired by Panera's"
This soup is awesome. I would have NEVER thought of putting cream cheese in a soup!! A friend of mine made this yesterday for her family and she quadrupled the recipe, and she had NO left overs. (7 people) We both ended up making this because the temps here dropped to single digits and our local grocery store had 8 pound bags of potatoes for .69 cents!!! You won't be disappointed."I have made this soup three times now. I've got it cooking on the stove as I type this. It is amazing. I've never been a big fan of potato soup until this recipe. I add about four cloves of minced garlic and use black pepper and cayenne. I only smash about 1/2 of the soup to keep it hardy. I serve it with crumbled bacon and shredded cheddar on top with garlic bread on the side. So good on these cold winter evenings!" - Daizyangel28

Cream Cheese Potato Soup "inspired by Panera's" Preparation
1) Combine broth, potatoes, onion and spices
2) Boil on medium heat until potatoes are tender
3) Smash potatoes to release starch for thickening
4) reduce to low heat
5) add cream cheese, stir frequently until cream cheese is melted
optional: shredded chicken, corn, or bacon
