This soup is awesome. I would have NEVER thought of putting cream cheese in a soup!! A friend of mine made this yesterday for her family and she quadrupled the recipe, and she had NO left overs. (7 people) We both ended up making this because the temps here dropped to single digits and our local grocery store had 8 pound bags of potatoes for .69 cents!!! You won't be disappointed.
"I have made this soup three times now. I've got it cooking on the stove as I type this. It is amazing. I've never been a big fan of potato soup until this recipe. I add about four cloves of minced garlic and use black pepper and cayenne. I only smash about 1/2 of the soup to keep it hardy. 1) Combine broth, potatoes, onion and spices
2) Boil on medium heat until potatoes are tender
3) Smash potatoes to release starch for thickening
4) reduce to low heat
5) add cream cheese, stir frequently until cream cheese is melted

starrrlyte8 3 months agoThis is the greatest soup ever. Multiple people we know make it all the time. Started using 1/3 less fat cream cheese and you can't tell. We also do some chopped chicken and corn to make it a full meal. Seriously best recipe I've ever made

KeriBomb 6 months agoFrekin delish ! I added 2 cloves of garlic..doubled the batch and a handful of kale and substituted for nuenchatel cheese.. a little less fat than regular cream cheese
