Mexican casserole dinner that is easy to make, and reheats well.

"I made this tonight for dinner. In general I stick to a recipe as much as possible. Since I am a Vegetarian I substituted the meat for Quorn Grounds (mushroom, not soy product). I also added black beans as someone else mentioned. Served with a small green salad and a dollop of low fat sour cream. I also used 2% cheese... Love Love Love this recipe! Original recipe makes 6
2 boxescornbread mix
1 lbground beef or boca crumbles
1 cangreen chilies; chopped
1 packagetaco seasoning mix
1 canregular corn
1 cancreamed corn
1 1/2 cupcheddar cheese; shredded

Mexican Cornbread Casserole Preparation

Brown ground beef add taco seasoning per package directions; add green chilies; set aside.

Mix cornbread per package directions and add 1/2 can cream corn and 1/2 can drained regular corn.

Pour 1/2 of cornbread mixture into bottom of 9×13 pan.

Put meat mixture on top of conbread mixture.

Put remaining can of corn and cream corn over meat mixture.

Add 1/2 the cheese.

Top with remaining cornbread mixture and cheese.

Bake at 350 for 35-40 min.

Let set 5 min or so and cut into squares.

    I only use one package of cornbread and pour it over the meat mixture. I also mix a can of black beans in with the ground turkey. My daughter can't have cheese so we leave it off and it's still delicious. Even my one yr old loves this meal!

    I really liked this recipe. Everyone was right though about cooking the bottom layer of cornbread first. I did not do that and the bottom layer was not as done as I would've preferred. I will definitely try this again, but I will cook the bottom layer first and also add black beans and onions to the mix. Great with sour cream!

    I am in the process of making it and it goes together very easy. One change i am making is the fact the recipe says to add the cheese on top. I have made cornbread and have had the cheese burn. I have always put the cheese on top as soon as it comes out of the oven. We'll see how it works this time.

    Very good, I baked first layer of cornbread for 25 mins & added meat & second layer then baked for 35 minutes. I also put all of the corn into the batter. We topped it w/sourcream, tomatoes, and olives.

    This recipe is a good starter recipe to build off of. I recommend adding more spices an vegetables.

    Love this. Added a can of Rotel and some green onions to the beef and it was awesome. I cooked it in a round casserole dish, a deep one, on 400 for about 40 minutes and didn't have a problem with the corn bread mix being to gooey.

    I made this lastnight,everyonr liked,usedonly one box of cornbread and just put on the top also added chilli beans to meat mixture and cooked chopped onions and garlic while browning meat,only used half can of cream corn in cornbread batter and half can reg corn mixed into meat mixture,will make again!

    I've made this for dinner a couple of times now & we love it. The only problem I've had is the cornbread mixture not fully setting on the second layer, creating a gooey mess. I think using less cornbread will solve the issue, and I appreciate the suggestions below about including different spices to add more flavor.
