Gluten Free General Tso's Chicken
This gluten free adaptation of a weight watchers version (good-bye deep fat) is a family favorite."Everyone in the family enjoyed this and requested that we make it again. I had boneless skinless chicken thighs, so I used those instead of the breasts, and it worked well. We halved the sugar, and had to leave out the pepper flakes. Still, very good. |1.5 tbspcorn starch|
|2 tbspgluten free soy sauce|
|1.5 tbspwhite wine vinegar (or more)|
|1/2 tspground ginger|
|1 tbsppeanut oil|
|2 mediumscallions; chopped|
|2 medium clovesgarlic; minced|
|1 tspred pepper flakes or 2 dried chili peppers; minced (or more)|
|1 lbboneless skinless chicken breast|
|2 cupswhite rice; cooked and kept hot|
Gluten Free General Tso's Chicken Preparation
In a medium bowl, whisk together broth, conrstarch, sugar, soy sauce, vinegar and ginger; set aside.
Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about five minutes.
Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
Serve chicken and sauce over rice. Yields about 1 cup of chiken and sauce and 1/2 cup rice per serving.
