In a large stock pot add tomatoes, chicken broth, butter, sugar, onion and baking soda. Simmer for 1 hour. In a double boiler heat cream until hot. You can also use a small saucepan over low heat. Make sure the cream does not burn. Once heated, add to tomato soup and serve.
Creamy and tasty! This soup goes well with a slice of sourdough baguette!

sgrishka 3 years agoThe combination of baking soda and sugar helps eliminate the tomatoes' acidity, allowing the tomatoes rich flavor to come through. In cream of tomato soup, adding baking soda also prevents the milk or cream from curdling. The baking soda should be added to the cooking tomatoes and any white foam should be skimmed off before adding milk or cream.
