3 lbsGround Beef; browned
2 15-oz cansdiced tomatoes; mexican style
1 15-oz candiced Tomatoes
2 14-oz canstomato sauce
2 packagesTaco mix
2 cansKidney Beans
2 cansCorn
2 15-oz cansBeef Broth

Mimi's Easy Taco Soup Preparation

In a very large soup pot, combine all ingredients (do not drain any of the cans). Bring to a boil and simmer approximately 30 minutes. Ready to serve.

Feel free to add crushed garlic to the ground beef, and to add 1/2 package of dry Ranch Dressing mix for a slight variation. I serve with a little fresh lime juice, sliced avocado, and cilantro on top. My kids like it with sour cream and cruncy tortilla chips, or a shredded mexican cheese blend. Either way, enjoy! [I posted this recipe.]
