Yummy dinner recipe from your Mom
Chicken Pie – this makes 2 pies
2 c cubed potatoes
1 c sliced carrots
1 c sliced celery
1/2 c chopped onion
Simmer these vegetables in water until tender – about 45 min.
4 T butter
4 T flour
2 cups non fat milk
2 tsp salt
2 cups shredded sharp Cheddar cheese
Melt butter in large sauce pan. Add flour slowly and blend. Gradually add milk and cook over low heat, stirring constantly, until thickened. Add salt and cheese, stirring until cheese is melted.
4 cups diced, cooked chicken
Add chicken and vegetables to flour mixture. Pour into frozen (now thawed) deep dish pie crusts, and put regular, refrigerated pie crusts on top. Poke holes in top. Bake at 350* for 30 to 45 minutes. If you want to freeze one, put in a freezer ziplock bag before cooking.
