Insalata Caprese Kebabs

Insalata Caprese is perhaps my most favorite salad. I wanted to serve this for our block's Annual Holiday Open House, so I converted it to a finger food. It was a big hit! Bonus: once arranged it had a very holiday appearance.

| 1 lbgrape tomatoes |
| 1 lbfresh mozzarella; cut into 1/2" cubes |
| 2 ozfresh basil leaves |
| 2 tbspextra virgin olive oil |
| Kosher salt and fresh ground black pepper to tast |
| 60 Wooden Sandwich picks |
Insalata Caprese Kebabs Preparation
Partially wrap a basil leaf aroun the grape tomato (you may have to cut some of the larger leaves to fit), skewer the wrapped tomato with the sandwich pick. Place a cube of mozzarella on the end. Continue until all the tomatoes and cheese is skewered. Arrange on a platter, drizzle with the olive oil, then sprinkle with salt and pepper.
