1 cupTomatoes; chopped
1 cupZucchini; chopped
1 cupYellow squash; chopped
1 cupSpinach; fresh chopped (packed)
2 Scallions; chopped
1/4 cupParmesan Cheese; grated
1 1/2 cupsMilk
3/4 cupBisquick
3 Eggs
1 teaspoonWorcestershire Sauce
2 teaspoonDijon mustard

Crazy Vegetable Pie Preparation

Preheat oven to 400 degrees. Scatter tomatoes, zucchini, squash, spinach, scallions, and cheese over bottom of greesed 10 inch pie plate.

In a medium bowl, wisk together milk, bisquick, eggs, Worcestershire, and mustard until smooth. Pour over vegetables.

Bake about 30 minutes, or until knife inserted in center comes out clean. Let pie stand 5 minutes before serving.

Notes

You can add mushrooms, italian seasonings, salt and pepper.
