Sprinkle pork chops with pepper
melt butter in pan over med-high heat, add pork chops, turning as needed 8-10 min total
combine preserves and mustard, spoon over browned pork chops
reduce heat to med-low; cover and cook until 150 degrees, then remove from pan
add vinegar to pan, increase heat to high, stirring to loosen bits, reduce until 1/4 c (2-3 minutes)
serve with couscous and veggie
