Ingredients for the beef loaf:
1 lb ground beef
1 egg
1/2 cup bread crumbs
2 tbsp mushroom soup mix
2 tbsp tomato ketchup
2 tbsp soy sauce
1/2 cup cheddar cheese; shredded
1/4 cup milk
1 tsp seasoning
1/2 cup crushed cashew nuts
2 tbsp mayonnaise
Ingredients for the mashed sweet potatoes:
2 cup potato; (about 2 pounds)
2 cup sweet potato
1/2 cup fresh milk
1/4 c sour cream
3 tbsp butter
3 tbsp fresh spring onion; chopped
2 tbsp chopped fresh parsley
1/2 tsp Salt
1/4 tsp black pepper; ground
1/2 tsp cinnamon
Ingredients for the Squash Sauce:
1 cup squash; diced
3 cloves garlic; smashed
2 tsp fresh sage; minced
1/2 cup all purpose cream
1/2 cup water
2 tbsp vegetable or canola oil
2 tbsp peanut butter
1 tsp iodized salt
1 dash pepper
2 tbsp Butter
Ingredients for the Coconut Bechamel:
1 c coconut milk
3 tbsp Butter
3 tbsp Flour
1/2 tsp iodized salt
1 dash pepper

Preparation

Procedure for the beef loaf:

Mix all (except cashew and mayo) the ingredients and shape into an oval loaf. Moisten with mayonnaise and cover entirely with crushed cashew nuts.

Place in microwave-safe dish. Cover with waxed paper and microwave on high for 10 minutes, turning half way through.

Drain and cover with foil. Let the meat loaf stand for 10 minutes before serving.

Procedure for the mashed sweet potatoes:

Place potato in a saucepan; cover with water. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until tender. Drain. Return potato to pan. Add milk and remaining ingredients; mash with a potato masher to desired consistency.

Procedure for the Squash Sauce:

Simmer squash in salted water, add 2-3 tbsp oil and garlic. Drain then osterize. Add water, vegetable oil, peanut butter, salt and pepper. In a sauce pan, heat butter, and add the blended mixture and simmer till thickened.

Procedure for the Coconut Bechamel:

In a saucepan, melt butter. Stir in flour, salt and pepper. Add coconut milk all at once. Cook and stir over medium heat until thick and bubbly.

Assembly: On an oversized plate, create concentric patterns using the squash and coconut sauce. Place a slice of beef loaf on center and top with a scoop of mashed sweet potatoes. Cover with another slice of beef loaf. Garnish with parsley. [I posted this recipe.]
