1.In your magic bullet cup or small blender,, beat the eggs, and the shallots. Season with nutmeg, salt, and pepper.
3.Place your spinach on a micro wave safe plate, sprinkle with parm cheese salt and pepper, ( i also spray with a butter spray like Parkey)optional*) mirco for 1-2 min just to cook the spinach,
2.In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, add the spinach to the top and roll your omelette over, and continue cooking 1 minute. Reduce heat to low, and continue cooking till your desired doneness.
