A very light, delicate cake... almost like a sponge cake. Orange flower water can be obtained at many grocery stores or substitute 2 drops orange oil and 2 1/2 tablespoons water.
Butter and flour a 9-inch springform pan. Cut a 9-inch round piece of parchment paper, butter one side of it and set aside. Preheat oven to 350?.
Beat egg yolks with half of the granulated sugar until well ribboned, about 2 minutes. Beat in orange zest, then whisk in olive oil in a very slow trickle. Add wine and flower water. In medium bowl mix together flour and salt then beat into egg mixture.
Beat room temperature egg whites with cream of tartar until they hold soft peaks. Beat in remaining granulated sugar and continue beating to the stiff peak stage. Gently stir 1 cup of the beaten egg whites into batter then fold remaining whites into batter until fully incorporated. Pour into prepared pan and bake for 20 minutes. Decrease heat to 300? and continue to bake another 20 minutes. Turn off oven, cover top of cake with prepared round of buttered parchment and leave in oven for another 10 minutes. Remove from oven and let cool in the pan on wire rack.
To serve, whip cold heavy cream to soft peaks and add 1 tablespoon of confectioner's sugar and the vanilla extract. Slice cake and serve with a dollop of whipped cream dusted with some of the remaining confectioner's sugar.
