Great one dish entree~
Place bread in a blender or food processor and process into breadcrumbs. Transfer to a medium bowl. Add the oil, thyme and paprika and mix well. Press into the bottom and up the sides of a 9-inch pie plate. Bake at 400 degrees for 7 minutes.In a food processor puree the cottage cheese, egg substitute and Parmesan cheese. Transfer to a large bowl. Pat the artichokes dry with paper towels and cut into bit-size pieces. Stir artichokes into the cheese mixture and pour into the pie shell. Bake at 350 degrees for 30 minutes, or until an inserted knife comes out clean. To serve, cut into 8 slices.
