Substitute sugar-free pancake syrup for the maple syrup to cut calories. Other firm fruits can be used in place of the apples, pears or peaches would probably be fine.

8 slicesBread, whole wheat; cubed
12 ounceTofu, soft silken
3/4 cupSoy milk
2 tablespoonMaple syrup
1 teaspoonSplenda; or Sugar
1/4 teaspoonCinnamon
1/8 teaspoonNutmeg
2 eachApple; peeled and chopped

French Toast Muffins Preparation

Set bread and apples aside. Whirl all other ingredients in food processor. Stir in apples. Spray 12 muffin tin with Pam. In bowl toss together bread cubes and liquid mixture. Spoon into tin. Bake at 350? for 30-35 minutes. Let cool slightly, run a knife around edges of each muffin and remove from tin. Serve with margarine and additional maple or sugar free pancake syrup.
