My take on the hearty classic chicken tortilla soup
Soup -
Pour chicken broth into large sauce pan - add chicken, half of the onion, half of the garlic and half of the cilantro.
Bring to a boil, reduce to simmer and cook approximately 20 minutes, until chicken is done.
Remove chicken with tongs to a plate to cool.
Strain broth into a large bowl, discarding solids.
In a food processor or blender - blend half the tomatoes, chipotle, jalapeno, remaining garlic and remaining onion.
In a large sauce pan or dutch oven, heat one tablespoon of the oil until shimmering.
Carefully pour the vegetable puree into the hot oil, sauteeing until the mixture darkens in color.
Mix the reserved broth into the sauteed vegetable puree.
Add the corn, beans, remaining tomatoes, chili powder, cumin, oregano and remaining cilantro.
Bring to boil, reduce to simmer - simmer until corn is cooked ~10 minutes.
Shred cooled chicken, discarding bones, add to soup.
Salt and pepper the soup to taste.
Tortilla strips -
Heat oven to 400 degrees.
Toss tortillas strips in remaining tablespoon of oil, place on lined sheet pan and toast in oven for 4 to 5 minutes, until lightly toasted and crunchy, remove and place on paper towels to cool.
Serve warm with tortilla strips as garnish.
Other good garnishes are crumbled Queso Fresco, sour cream or additional cilantro sprigs.
