| 1 1/4 cupsPrunes; finely snipped |
| 1 cupCranberries; whole |
| 2/3 cupApricots; dried |
| 3/4 cupPecan; chopped |
| 1 cupVegetable Oil |
| 2 jarsPlum babyfood; strained |
| 3 Eggs; large |
Not The Usual Fruitcake Preparation
Preheat oven to 375? degrees. Prepare 2 6-cup Bundt pans with butter. Sprinkle each pan with 1/4 cup sugar. Shake out excess. Mix remaining 2 cups sugar, flour, baking powder, spices salt in a large bowl. Add fruit and nuts. Stir well with wooden spoon. Whisk oil, baby food and eggs until blended; pour over flour mixture and beat by hand just until dry ingredients are moistened. Spoon batter into prepared pans. Bake 50-60 minutes or until toothpick test is clean. Cool Completely in pans on wire rack.
