Breakfast Casserole
| 2 lbsbulk sausage |
| 1 packagefrozen hash browns; (don't know the size of the bag, but either the shreds or cubes |
| 1 dashonion and green pepper; chopped |
| 8 ouncesSour cream |
| 10 Eggs; (up to 12) |
| cheddar cheese; what ever amount you prefer, shredded |
Breakfast Casserole Preparation
Brown and drain sausage. Set aside. Brown hash browns. Chop onion and green pepper. Beat 10-12 eggs and add sour cream
Mix sausage, hash browns and peppers/onions
put into large rectangular pan. (I use my lasagna pan)
Pour eggs mixture over top
Bake at 375 degrees for about 25 minutes and check to see that eggs are set. If not, bake about 5 minutes longer. Top with shredded cheddar cheese and bake until melted. Cut into squares and serve.
This is especially good topped with sour cream and salsa.
Notes
You can substitute:
Ham for the sausage
Egg beaters for the eggs
You can make it cheesier by adding cheese to the potato mixture.
The recipe is very flexible. And easy to adapt to personal preferences
Adding ground beef or ground turkey (instead of sausage or ham)and a can of corn turns it into a great dinner casserole
You don?t have to brown the hashbrowns, but I find it tastes better. I am using ?Simply Potatoes? brand hashbrown shreds this year and I don?t think I?m going to brown them.
