This is a low-cal ham and bean soup with cabbage!

Original recipe makes 8
1 tablespoonolive oil
1 Onion; diced
4 Carrots; diced
1/2 headCabbage; cored, sliced into 2" long pieces
1/2 poundHam steak or leftover ham; diced
1 boxChicken Stock
1 large canChopped Tomatoes
2 cansWhite beans
1 teaspoonPepper flakes
1/2 bunchFresh Parsley; medium chopped
2 teaspoonOregano; dried

Hearty Ham and White Bean Soup Preparation

Heat the oil over high heat. Add Onions, Carrots and saute for 2 minutes until onions are soft.

Add remaining ingredients, then bring to a full simmer.

Simmer for 15 minutes and then reduce heat to low and simmer until vegetables are soft.

Stir in the parsley.

Serve. (I add a little grated parmesean over top each bowl of soup to thicken.

Easy and very tasty soup. Great way to use leftover ham

Great recipe and not so difficult to prepare. In order to make it even tastier I added a few slices of jamon iberico de bellota - aka iberico ham or pata negra- thinly cut. Because iberico has a strong and delicious flavor you do not need much, only 50 grams or 1.8 OZ for four people added once the soup is finished.
