Spaghetti Squash Surprise

This is a great Meal, Side Dish. If you are Vegan, omit the Cheese and add a handful of toasted Pine Nuts or Pecans, chopped.

| 1 largeSpaghetti Squash; 3-4 lbs |
| 1 1.5-lbSweet Potato; Skin on, cut into 1/2 inch cubes |
| 2 largeShallots; 1/2 inch cut |
| Butter-Flavored Crisco Spray |
| 1/4 teaspoonPepper |
| 1 teaspoonGarlic powder |
| 1/4 teaspoonFive spices powder |
| 1/2 cupAsiago Cheese; Grated |
| 1/2 cupRomano Cheese; Grated |
| 1 16-oz jarCorn, Blackbean & Roasted Pepper Med. Salsa; (Marke |

Spaghetti Squash Surprise Preparation
Preheat oven to 400 degrees.
Cut Spaghetti Squash in half. Seed, then spray with Butter Flavor Crisco. Sprinkle with Pepper and turn upside down on a baking sheet. Pour water into pan and bake 35-40 minutes until skin is bubbled and Squash is fork-tender.
On a seperate sheet pan, spray with Butter Flavor Crisco. Place Shallots and Sweet Potato on baking sheet. Sprinkle with Five Spice and place on rack in oven with Squash and bake for the same time.
In a large bowl, shred the Spaghetti Squash and add the Shallots and Sweet Potatos. Combine all the other ingredients. Toss and Serve.
