I don't eat squash, but i do eat this! Yep it is that good
"This has become a routine dish for our family. We have done it with all yellow squash and with half yellow squash and half zucchini. Both were good, but half and half is definitely better."

Ingredients
| 6 cupsyellow squash and zucchini; diced |
| 1 vegetable oil |
| 1 cupOnion; chopped |
| 4 tablespoonsbutter |
| 1/2 cupsour cream |
| 1 salt |
| 1 pepper |
| 1/2 tspgarlic powder |
| 1 1/2 cupcheddar cheese |
| 1 cupRitz cracker; crushed |
Simple Squash Casserole Preparation
oven to 350
saute squash in little veg oil over med-low heat line collander with paper towels and drain squash well.
in skillet saute onion in butter.
mix all ingredients together except crackers.
pour into buttered dish and top with cracker.
bake 25-30 minutes.
