Ingredients
| 6 largeEggs; hard boiled |
| 4 ozsmoked salmon; Cold, very finely diced (about 1/2 C) |
| 1/4 cupFresh chives; very thinly sliced |
| 1/4 cupMayonnaise |
| 2 tablespoonRed onion; minced |
| 2 tablespoonCapers; rinsed and finely diced |
| 1 tablespoonFresh Lemon Juice |
| 1/2 teaspoonlemon zest; Finely grated, packed |
| Black Pepper; freshly ground |
Smoked Salmon Deviled Eggs Preparation
Peel and halve eggs lengthwise. Remove yolks and crumble into medium size bowl. Add salmon, 3 T. of chives, mayonnaise, onion, capers, lemon juice, zest, and 1/8 t. pepper and mix well. Mound the filling into the egg whites. Garnish with the remaining chives and several grinds of black pepper.
