A breakfast casserole you make the night before and put in the oven the morning of. Delicious!

Original recipe makes 9
1 dozenEggs; (beaten in large bowl)
9 Potato Hash Brown Patties; Frozen, (up to 12)
2 cupsMeat; ( Ham, Bacon, Sausage (all precooked) * the meat is your choice)
1 canMushrooms; (small or large - your taste)
0.5 Onion; (chopped fine)
1 canDiced Tomatoes; (sm or lg size depending on your ta
2 cupsCheese (any type); Grated
Pam; (or oily spray for bottom of cooking dish)
1 Salt and pepper

Egg & Potato Casserole Preparation

Buy Frozen Potato Patties (usually come 9-12 in package)

Spray bottom of 9 x 12 baking dish,

arrange frozen potatoes in bottom,

sprinkle meat on top of potatoes,

add mushrooms on top of meat,

spread chopped onions and can of tomatoes on top of mushrooms,

Add 1 tsp salt and 1/2 tsp pepper to eggs, pour eggs over top of everything.

** at this point you may either put foil over the top and put in refrigerator till morning or place in freezer till you need it.**

When your ready to cook it, put 2 cups of cheese on top (spread evenly) place in oven at 350 degrees for 45 minutes.

It is done when a knife comes out clean.

    * the key here is to make this your own casserole. Your choice of meat, cheese, if you add mushrooms or not, onions or not. Make it your own and enjoy. Also salt and pepper or any other spice to your taste. [I posted this recipe.]
