Original recipe makes 4
2 cupspecans; finely chopped
2 tablespoonsolive oil
1/2 cupsoy based cheese substitute (swiss or sha; shredded
2 tablespoonsolive oil
1/2 cupshallot; chopped
2 cupsmushrooms; (your favorite) thin sliced
4 green onions; sliced thin
1/2 jalapeno
1 poundsoy sausage; breakfast style
1 1/2 cupsoy milk
8 largeEggs; lightly beaten (or egg substitute)
1/2 teaspoonsSalt
1 teaspoonspeppercorns; fresh ground (mixed is best)
2 tablespoonsfresh thyme; finely chopped
1/2 cupsoy-based cheese substitute; shredded

Garden Soysage Quiche With Walnut Crust Preparation

Mix first three ingredients and press on bottom and partly up sides of 2, 9" or 10" deep dish pie plates. Bake at 350 for 20 minutes.

In large skillet over medium heat, sautee mushrooms, shallots and green onions for a few minutes until just soft. Crumble sausage into skillet and heat through. Remove from heat and pour into mixing bowl. Add remaining ingredients, in the order given, and stir to combine. Very gently (to not disturb the nut crust) LADLE the egg mixture into the crusts. Bake at 350 until set, 25-30 minutes.

You may use regular bulk sausage and regular cheese if you prefer. Soy products are not safe for some diabetics and others with such dietary restrictions.
