Good
Rinse and drain peas and carrots and shrimp.
Break egg in a small bowl and stir.
Put 1 T. oil in saute pan and heat to medium. When hot, slowly pour in egg. Stir until done.
Heat wok or pan to medium heat, add sliced bacon, stir to separate and cook until crisp, 3-5 minutes. Remove from pan and blot off excess oil.
Reheat wok or pan to medium heat, add 2 T. oil and heat, then add cooked rice and stir-fry until piping hot, 4-6 minutes.
Add peas and carrots and shrimp and stir until hot.
Add garlic/soy sauce, bacon and eggs and toss well.
Add green onions and mix well.
Good two-person meal, double for larger group. Very tasty.
