Spicy Sausage Rotini with Tomatoes & Roasted Red Peppers
This pasta dish is perfect for those who like a little heat. It blends rotini pasta, Spicy Italian sausage, tomatoes and roasted red peppers to make a tasty fulfilling meal. I like to pair this with a nice side salad and garlic bread.

Spicy Sausage Rotini with Tomatoes & Roasted Red Peppers Preparation
Bring a pot of lightly salted water to a boil. Cook pasta until al dente. Drain pasta and set aside, reserving 1/2 cup of pasta water for later.
In a saucepan, heat oil and saute onion, garlic, and sausage (squeezed out of their casings, if there is any). Cook sausage until browned. Drain sausage mixture, set aside and remove any remaining grease from saute pan.
Put pan back on heat, add tomatoes, red peppers, broth, sausage mixture and Italian spices. Let simmer on very low heat for 15-20 minutes to marinate flavors. Add cooked pasta to sausage & tomato mixture and toss in pan.
If sauce is at the right consistency to your liking, then discard reserved pasta water. If sauce is too thick for your liking, add pasta water in small amounts at a time, until your preferred thickness.
Transfer to a serving plate and sprinkle with parmesan cheese.
