Chicken and Brie Quesadillas with Chipotle Salsa
This is a really nice quesadilla to serve as an appetizer or a for a light meal. The brie gives them a really creamy texture and the chipotle salsa gives a nice smoky kick.

I didn't have some of the ingredients so I left out the green chillies and adobo I just added diced chicken red chillies garlic lime juice, fresh lime, onion and coriander an a dash of salt, perfect for on top of a salad and I put mine in a baguette with melted brie cheese!!! | 1 smallOnion; chopped |
| 3 clovesGarlic; minced |
| 3 tablespoonFresh lime juice |
| 2 teaspoonChipotle chiles in adobo sauce; minced |
| 1/2 teaspoonSalt |
| 5 Green onion; minced and divided |
| 1/2 cupFresh cilantro; chopped and divided |
| 1 largeChicken breast |
| 4 1/2 ouncegreen chile; drained, Diced |
| 8 7-inchFlour tortillas |
| 8 ounceBrie cheese; trimmed and diced |
Chicken and Brie Quesadillas with Chipotle Salsa Preparation
Roast your chicken breast in the oven at 350 deg F until juices run clear. After cooking chicken, remove from oven, let cool and then finely chop.
Stir together first 6 ingredients, 1/4 cup green onions, and 1/4 cup cilantro. Let stand 1 hour to marinate flavors.
Stir together remaining green onions, remaining 1/4 cup cialntro, cooked chicken and diced green chiles.
Increase oven temperature to 425 deg F.
Arrange 4 tortillas on a large lightly greased baking sheet. Top evenly with cheese, chicken mixture, and remaining tortillas, pressing down each one slightly to compact ingredients.
Bake at 425 deg F for 8 to 10 minutes until cheese is melted and tortillas are starting to turn a golden color. Slice into wedges and serve immediately with chipotle salsa.
