Basic Blinis

This is a basic recipe for Blinis, that can be served with anything on top, Sweet or Salty. We normally do layers of Smoked Salmon, Tarama, Grated cheese etc ... everyone creates their own to their individual taste!

1 kgFlour
25 gyeast cake; (bakers type in a block of 25g)
1 literMilk
4 pinch ofSalt

Basic Blinis Preparation

Warm the milk in a pot until luke warm, and remove from the heat (not too hot or the yeast will die).

Break the yeast cake into the warm milk and stirr slightly.

Seperate the egg whites (keep the whites aside until the end) and add the egg yellows into the yeast/milk mixture.

Mix the flour and the liquid mixture together. Now add the egg whites from above with a pinch of salt and mix well.

Let the mixture stand for a while for the yeast to start working.

Spoon enough of the mixture, into a heated non stick pan, to make a small pancake of about 8-10cm in diameter. (a very small amount of oil can be added)

Turn the Blini around and cook the other side.

You mention eggs in the preparaton, but not with the ingrediƫnts! How many do I need? Greetings, Ingrid

Serve in a plate on the table, with several bowls of toppings, and let each person make his own. Usual toppings include Smoked Salmon, Tarama, Tzatziki, Grated cheese, preserved onions etc. The idea is to make layers of sweet and sour (or both) and then eat! [I posted this recipe.]
