Caldo De Res (beef Soup)

This is a traditional Mexican beef soup. You can make it a vegetarian soup if you dont use the meat. Great for a cold day.

Original recipe makes 4
2 lbBeef Shank with bone
1 Tomato
1/2 Onion
4 Potatoes; cut in halfs
3 Carrots; coarsely chopped
1/2 Cabbage; cut into wedges
2 Garlic
4 teaspoonFresh Cilantro; chopped
1 tablespoonSalt
2 Corn; husked & cut into thrids
2 Chayote; quartered
2 cubesBeef bouillon

Caldo De Res (beef Soup) Preparation

Cut the meat into about 1/2 inch pieces.

In a large pot over medium heat combine the water, beef, tomato, onion & Garlic. Cook for 1 hour. Add the potatoes, carrots, cabbage, corn, chayote and cilantro and beef bouillon cubes, simmer for 1 hour. Remove lid and simmer for about 1/2 hour with lid off. Serve hot. Just before eating squeeze in fresh lime juice to taste (optional)
