Caldo De Res (beef Soup)
This is a traditional Mexican beef soup. You can make it a vegetarian soup if you dont use the meat. Great for a cold day.

Caldo De Res (beef Soup) Preparation
Cut the meat into about 1/2 inch pieces.
In a large pot over medium heat combine the water, beef, tomato, onion & Garlic. Cook for 1 hour. Add the potatoes, carrots, cabbage, corn, chayote and cilantro and beef bouillon cubes, simmer for 1 hour. Remove lid and simmer for about 1/2 hour with lid off. Serve hot. Just before eating squeeze in fresh lime juice to taste (optional)
