Soup Nazi Indian Mulligatawny Soup

Remember the Seinfeld episode about the soup nazi, well, here is one of the recipes inspired by the Soup Kitchen International in Manhattan, this restaurant was the inspiration of the episodes about the Soup Nazi. Cooking these soups 4-5 hours is what really makes them good. I have now posted 3 of his recipes.

"I made this yesterday. I added a little more curry 14/tsp towards the end. Marked difference between 2 1/2 hrs and 5 hrs in taste. Better the next day. I haven't tried Al's Mulligatawny but I have had other varieties from the stores. This is comparable. There is enough salt from stock, cashews and pistachios" - wyattj

4 quartswater; (16 cups)
6 cupsChicken Stock
2 potatoes; peeled & sliced
2 carrots; peeled & sliced
2 stalks celery; with tops
2 cupseggplant; (about 1/2 of an eggplant), peeled & diced
1 mediumOnion; chopped
1 cupfrozen yellow corn
2/3 cupcanned roasted red pepper; diced
1/2 cupTomato sauce
1/2 cuppistachios; shelled
1/2 cuproasted cashews
1/2 cupfresh Italian parsley; chopped
1/4 cupLemon juice
1/4 cupButter
3 tablespoonsSugar
1/2 teaspoonCurry powder
1/2 teaspoonPepper
1/4 teaspoonThyme
1 Bay leaf
1 dashmarjoram
1 dashnutmeg

Soup Nazi Indian Mulligatawny Soup Preparation

1. Combine all ingredients in a large pot over high heat.

2. Bring to a boil, then reduce heat and simmer for 4-5 hours or until soup has reduced by more than half, and is thick and brownish in color. It should have the consistency of chili. Stir occasionally for the first few hours, but stir often in the last hour. The edges of the potatoes should become more rounded, and the nuts will soften. Serve hot.
