Gazpacho Preparation
Cut 1 cucmber into ¼ “ dice and set aside. Cut other cucmber into chunks.
In food processor, blend tomatoes, red pepper, garlic, lemon juice, oil, salt, pepper, and cucumber chunks. Stir in diced cucmber. Chill 3-24 hours. Top with corn, avocado, and onion.
