Baked Apples with Pecans and Dried Fruit Preparation
Toast pecans at 350 degrees for 12-15 minutes, stirring once. Core apples and cut about halfway down into wedges. Brush apples with lemon juice. Place in 9" pie plate. Combine 1 Tbsp butter, raisins, cranberries, brown sugar, cinnamon, and nutmeg. Stuff into center of apples. Top with remaining 1 Tbsp. of butter. pour cider, vanilla, and rum (if desired) around apples. Bake 1 hr. and 20 min. at 350 degrees or until apples tender, basting every 30 minutes. Strain juice and reduce to syrup. Serve over apples.
