This is a quick light meal for lunch or dinner when you haven't had time to plan ahead.
Spray saute pan with olive oil cooking spray. Slice chicken breasts into thin strips and season with chili powder and cumin. Cook at medium-low heat until cooked throughout, but still juicy.
Take 6 tortillas and spray 1 side with olive oil cooking spray. Lay oiled side down on large baking sheet. On each tortilla: put 1/2 cup of cheese, 1/6 of cooked chicken, 2 TBS of salsa, and 1 tsp of cilantro, spreading out all ingredients. Layer each one again with remaining tortillas and flatten each one down. Spray top side of tortillas. Bake in oven at 350, flipping halfway through, for about 10 minutes or until turning golden brown and cheese is melted.
Cut in wedges with a knife or pizza cutter. Serve with sour cream and more salsa and sprinkle with chopped fresh chives, if desired.
