Mushroom/Nut Roast with Warm Fresh Tomato Sauce
This is a yummy vege meal that is high in protein and even your carnivore friends will adore!

| 1 onion |
| 300 g mushrooms |
| 1 tablespoonolive oil |
| 200 g brazil nuts |
| 200 g sunflower seeds |
| 100 g pine nuts |
| 100 g cheddar cheese; grated |
| 100 g parmesan cheese; grated |
| 1 Egg; lightly beaten |
| 80 g wholemeal bread crumbs |
| 1 salt; to taste |
| 1 pepper; to taste |
| tomato sauce: |
| 400 g tomatoes; chopped |
| 1 tablespoonolive oil |
| 1 garlic glove; you may use 2 gloves |
| 1 teaspoon ofSugar |
| 1 salt; to taste |
| 1 pepper; to taste |
Mushroom/Nut Roast with Warm Fresh Tomato Sauce Preparation
Grease a baking tin.
Dice the onion and finely chop mushrooms. Heat oil in fry pan and add onion, garlic and mushrooms. Fry until soft. Cool.
Finely chop nuts and seeds.
Preheat oven to 180' C
Combine mushroom mixture, nuts/seeds, cheese, egg and breadcrumbs in a bowl. Season with salt and pepper to taste.
Press mixture into baking tin and bake for 45 mins or until firm.
While baking, make your tomato sauce.
Heat garlic in a fry pan and add chopped tomotos, stirring frequently. Stir in sugar and simmer gently for 5 mins or until slightly thickened. Season with salt and pepper to taste.
