Seared Salmon Tacos with Chipotle Cream Sauce

Very simple meal for a Sunday afternoon. This was perfect for the hubby and I, it was quick and simple and very tasty and filling.

Servings          
Original recipe makes 3 Servings
2 Salmon Fillets
1 Olive; oil
1 Salt
1 Pepper
0.5 cupshredded lettuce or cabbage
0.5 Chopped white onion mixed with cilantro
8 Corn Tortillas
1 Oil; for frying tortillas
2 chipotle peppers
0.25 cupfat free plain yogurt or sour cream
1 tablespoonmayonnaise

Seared Salmon Tacos with Chipotle Cream Sauce Preparation

Fry tortillas in hot oil for 1 minute on each side in high heat, this will make them a little crunchy, fry them less for softer tortillas. Drain on paper towel. Set aside

Season Salmon with salt and pepper on both sides and seer in a little hot oil, get it nice and brown on the out side, you can finish cooking it in the microwave if needed.

For the sauce, just put all ingredients in your magic bullet or a blender and blend on high until well blended. Reheat the tortilla's for just a few seconds in the microwave?.Put it all together for Taco Sunday or any other day during the week. The sauce is a little on the spicey side, you can try 1 chile first and then taste to see if another half is needed.
