Shepherd's pie with fresh thyme
Ingredients
| FOR THE POTATOES: |
| 2 lbsrusset potatoes; peeled and cubed |
| 0.5 cupmilk |
| 0.25 cupunsalted butter |
| 1 Kosher salt to taste |
| 2 egg yolks |
| FOR THE FILLING: |
| 1.5 lbground beef sirloin or lamb |
| 1 cupdiced onion |
| 1 cupdiced carrot |
| 2 tbspextra-virgin olive oil |
| 8 ozbutton mushroom quartered(3 cups) |
| 1 cloveGarlic; minced |
| 1 tbsptomato paste |
| 1 tbspall purpose-flour |
| 0.5 cdry red wine |
| 2 cupslow sodium chicken broth |
| 1 tbspminced fresh Thyme leaves |
| 1 tbspWorcestershire sauce |
| 1 Kosher salt and black pepper to taste |
Shepherd's pie with fresh thyme Preparation
Preheat oven to 400 degrees
Cook potatoes in boiling salted water in a saucepan until tender 12-15 minutes; drain
Return them to pan to dry over medium heat, about 1 minute; remover from heat.
Mash Potatoes with mile and butter; season with salt. Cool potatoes 5 miuntes; stir in yolks
Brown meat in a saute pan over medium heat about 5 minutes pressing meat into small pieces with a potato masher. Drain meat in a colander or sieve.
saute onion and carrot in oil in the saute pan over medium heat 4 minutes. Add mushrooms, saute 3 miuntes more. Add garlic and tomato paste;cool 1 minute stiring frequently. stir in flour
Deglaze pan with wine then add broth and thyme. Simmer until liquid reduces and thickens into a gravy, about 8 minutes. Stir in meat and Worcestershire; season with salt and pepper.
Pour meat mixture into a 2qrt baking dish. then top with mashed potatoes.
Place dish on a foil lined baking sheet in the center of the oven. Bake untilpie is bubbling and golden brown 30-40 minutes

add yolks to mashed potatoes only after potatoes have cooled slightly. Hot potatoes could curdle the yolks.
