Low Fat Basil and Sun-dried Tomatoes Dip

Sun-dried tomatoes, basil and low-fat cottage cheese meld to bring this low fat tasty dip. Serve this with low-fat crackers, carrot sticks, sweet peppers, broccoli florets or other vegetables.

6 Sun-dried tomatoes
0.5 cupBoiling water
2 cupsLow-fat cottage cheese
0.25 cupGreen onion; thinly sliced
0.25 cupFresh Basil; chopped
1 tablespoonLemon juice
0.5 teaspoonBlack Pepper; ground

Low Fat Basil and Sun-dried Tomatoes Dip Preparation

In a small bowl, combine the tomatoes and water. Let stand for 5 minutes to soften the tomatoes. Drain well and chop finely.

Place the cottage cheese in a food processor. Add the tomatoes, green onions, basil, lemon juice and pepper. Process with the pulse button until mixed and somewhat smooth.
