Shrimp Rolls
Original recipe makes 4 Servings
| 1 1/2 teaspoonOlive oil |
| 1 lbLarge deveined and chopped shrimp |
| 3/4 cCorn kernels |
| 1/4 cMayonnaise |
| 1/4 cPesto sauce |
| 2 tablespoonLemon juice |
| 1/2 ofRed bell pepper; cut into 1/2 inch cube |
| 3 Scallion; thinly sliced |
| 4 Hot dog buns |
Shrimp Rolls Preparation
In skillet heat oil over medium-high heat. Add shrimp and cook, stirring until opaque, about 3 minutes. Remove from heat, stir in corn and let cool
Stir together mayo, pesto, and lemon juice. Add shrimp mix, bell pepper, scallions and toos. Season with salt and pepper. Serve in buns.
