CHILI; Old Fashioned, Simple & Delicious
Old fashioned chili made with ingredients you probably already have in your kitchen. An old south Texas recipe that has been passed down for several generations. For vegetarians substitute a one pound package of the soy burgers (crumbled). No one will know the difference!

| 1 mediumOnion; diced |
| 1 mediumbell pepper; diced |
| 1 sprigcilantro |
| 1 canranch style beans (optional); 15 oz |
| 1 canRotel diced tomatoes and green chili peppers; 10 oz |
| 1 cantomato sauce; 15 oz |
| 1 teaspooncider or balsamic vinegar (more or less) |
| 2 teaspoonschili powder (or to taste) |
| 2 cupswater; or more as needed |
| 1 tablespooncooking oil |
| 0.5 teaspooneach salt and pepper (or to taste) |
CHILI; Old Fashioned, Simple & Delicious Preparation
In a large saucepan using medium heat, combine the oil, onions, bell pepper and the meat of your choice and cook until the meat is brown.
Stir in the beans (optional for Texans who mostly don't like beans in their chili), Rotel, tomato sauce, vinegar, chili powder, water, salt and pepper. Reduce the heat and simmer for 2 hours stirring every 15 minutes. Add more water for your desired consistency.
