Original recipe makes 4 Servings
| 2 eaZucchini; Large and shredded |
| 3 eaEgg |
| 1 cupOlive oil |
| 2 cupSugar |
| 2 teaspoonVanilla |
| 3 cupFlour |
| 1/2 teaspoonSalt |
| 1 teaspoonBaking Powder |
| 1 teaspoonBaking soda |
| 1 teaspoonCinnamon |
| 1/2 cupNuts; chopped |
Bread - Zucchini Preparation
Beat eggs and add oil, sugar, shredded zucchini and vanilla. Cream well.
Add flour, salt, baking powder and soda, cinnamon and nuts. Mix well and pour mixture into 2 greased loaf pans.
Bake 325F for 1 hour. Cool for 10 minutes prior to serving.
