4 cupWhipping cream
5 cupsMilk; whole
4 eaEggs
2 1/4 cupSugar
3 tablespoonFlour
1/2 teaspoonSalt
2 tablespoonVanilla
1 eaIce water; bag
1 boxRock salt
Optional Extras
4 tablespoonInstant coffee
2 teaspoonPeppermint extract
6 squaresSemisweet chocolate
2 teaspoonRum extract
2 1/2 cupRaisins

Dessert - French Vanilla Ice Cream Preparation

Combine eggs in a medium bowl; beat well with a whisk.

Whisk together sugar, flour, and salt in a large pan until blended. Whisk in milk and vanilla; bring to a simmer over medium heat, whisking constantly. Remove from heat. Gradually whisk about one-fourth of hot mixture into eggs; add to remaining hot mixture, whisking constantly. Cook over low heat 6 minutes or until thick.

Alternatively: Add coffee -- or -- peppermint and chocolate --or-- rum and raisins.

Remove from heat; whisk in cream. Cool completely; cover and chill thoroughly.

Pour into an ice cream maker and follow instructions with the rock salt and bag of ice.
