Don't use Refried Beans in the enchilada or as a side dish, unless you want heartburn!
Fry the tortillas, by quickly dropping them in a pan with hot olive oil, then flipping them. Brown the tortilla slightly, as this develops the flavor.
Make 'Enchilada Sauce' recipe or buy canned sauce.
Grease a baking dish. Load a tortilla with cheese and onion and roll it then place it seam side down in the pan. Use up all the cheese and 3/4 of the onion. Once the pan is full, pour the enchilada sauce over the top, until the enchilada''s are completely covered.
Cover and bake at 350F for 15-20 minutes til the cheese melts. Let sit for 10 minutes. Top with the last of the onion. Serve and garnish with cilantro and sour cream.
